Croutons

I was just looking at a bag of croutons (in search of a bedtime snack, lousy habit that it is), and noticed that said bag has a ziploc seal "to keep croutons fresh". Now, unless I'm mistaken, croutons are (toasted) stale bread. So why are we keeping stale bread fresh?

Unfortunately, there's a valid answer to that one. Croutons go "stale" by absorbing moisture and becoming less crunchy.

THat's frustrating- stale things shouldn't be able to get stale in the other direction. THat makes me think that if you let croutons get stale enough, they just turn into bread, and can start getting stale and turning into croutons again.
